I couldn't resist when I heard a friend was throwing a St. Patty's Day party and needed goodies. I love cupcakes and these came out great. Since I don't drink and there would be kids instead there, instead of using actual Irish Cream Liquor in the icing I substituted milk and flavoring. If you prefer to use Bailey's or other Irish Cream just omit the milk and extract and add 4 Tbsp Liquor.

Ingredients For irish vanilla bean cupcakes

  • VANILLA BEAN CUPCAKES
  • 3/4 c
    softened, unsalted butter
  • 1 2/3 c
    granulated white sugar
  • 2
    eggs
  • 2 2/3 c
    flour
  • 2 tsp
    baking powder
  • 3/4 c
    milk
  • 2 Tbsp
    milk
  • 1/2 tsp
    irish cream extract-flavoring
  • 1 tsp
    vanilla extract
  • 1
    vanilla bean with seeds scraped out
  • IRISH CREAM BUTTERCREAM
  • 1 c
    softened, unsalted butter
  • 3 c
    confectioners sugar
  • 4 Tbsp
    milk
  • 1 tsp
    vanilla extract
  • 2 tsp
    irish cream extract-flavoring
  • few drops
    green food coloring

How To Make irish vanilla bean cupcakes

    Preheat oven to 350 degrees and line cupcake pan with paper liners.

    In a large mixing bowl beat butter until it starts to get fluffy. Add sugar and beat 3 minutes. Add eggs one at a time and continue beating until well combined.

    In a separate bowl combine milk, vanilla, irish cream extract and vanilla beans. In another separate bowl mix flour, baking powder and salt. On low speed add the flour mixture and milk mixture alternating a little at a time; start and finish with the flour. Fill cupcake liners to about 2/3 full and bake about 23 minutes. Allow to cool completely before icing.

    To make icing just combine all the ingredients and beat until creamy.
