This recipe I learned to make it from my mother but the original recipe belonged to my grandmother. It is delicious.

Ingredients For grandma's carrot cake

  • 3 c
    self rising flour
  • 2 tsp
    baking soda
  • 2 tsp
    ground cinnamon
  • 1/2 tsp
    nutmeg
  • 1/4 tsp
    ginger powder
  • 1 c
    cane sugar
  • 1 c
    brown sugar
  • 1 c
    sour cream
  • 3/4 c
    vegetable oil
  • 4
    eggs
  • 1 1/2 tsp
    vanilla extract
  • 1 lb
    carrots, grated
  • 1 can
    pineapple, crushed 8 oz. (drained)
  • 1 c
    walnut pieces
  • 1 c
    coconut flakes
  • 1/2 c
    seedless raisins

How To Make grandma's carrot cake

    Preheat oven to 350 degrees Grease a 9"by 13" baking pan

    In a large mixing bowl mix the flour,baking soda,cinnamon, ginger and nutmeg.

    On another bowl, mix the white sugar, brown sugar, sour cream, eggs,vegetable oil and vainilla. Add this mixture to the dry ingredients mixture. Mix well.

    Add Slowly add the walnuts, carrots, coconut flakes and raisins to the mixture.

    Pour onto greased pan and bake for aroung 40-45 minutes. Chill and cover with cream cheese frosting.
