I never care to much about sweet potatoes, but when my grandmother make this cake , I would eat several slices of it ,of course I would add my own twist to it by placing ice cream on top when she first take it out of the oven.

How To Make grandma sweet potato cake

1Combine oil and sugar in a large bowl. Beat until smoth, add egg yolks. Beat well , add hot water. Combine dry ingredients. Blead into sugar mixture. stir in boil potatoes, pecan, ans vanilla. blean throughly. Beat egg whites until a stiff peak. Pour into batter mixture then pour into 3 greaseed and loured 8 inch cake pan. Bake at 350'F for 25 to 35 minutes. let cool

2FILLING: 1 cup sugar 1 cup milk ( can) 3 eggs yolks 1/2 tsp. vanilla 1 can of coconut Mix together and spread over cool cake.
