Per request, I am posting this frosting separately so people can just search for frosting. This is my family-tested Dobash recipe. Don't let the richness fool you. We love this frosting for its light and just-right sweetness. I have also posted the full recipe for the cake with the frosting. I hope you like it as much as we do!

Blue Ribbon Recipe

This is a recipe for the frosting of a Hawaiian-style Dobash cake. Light in chocolate flavor and not overly rich, it's similar to a thick chocolate custard. Dobash cake has six layers. We baked three cakes, sliced them in half, and put a little frosting in between each layer. Once assembled, the cake is light and delicious. Chilling the frosting will help to make spreading easier. We also recommend keeping this cake chilled.

  • 1 c
    granulated sugar
  • 2 c
    water
  • 1/4 c
    butter or margerine
  • 1/4 tsp
    salt
  • 1/3 c
    corn starch
  • 1/2 c
    sweetened cocoa powder

We doubled the recipe for the frosting for our cake. If you're conservative with the frosting, you can make it work without doubling.
  • Bringing sugar, water, butter, and salt to a slow boil.

    In a saucepan, combine sugar, 1 1/2 cups of water, butter, and salt. Stir and bring to a slow boil. Lower heat to medium.
  • Water, corn starch, and cocoa combined in a bowl.

    In a separate small bowl, combine the remaining water with the corn starch and cocoa. Stirring until smooth.
  • Adding cocoa mixture to hot mixture.

    Add cocoa mixture to hot mixture, whisking constantly to avoid lumps.
  • Whisking until frosting is thick.

    Cook on medium heat until smooth and thick. Remove from heat and continue stirring until cool.
  • Adding Dobash Frosting between cake layers.

    If doing a layered cake, put a thin layer of frosting between each layer.
  • Cake coated in Dobash Frosting.

    Frost your cooled cake. Done!
