I love checking out tea rooms and small cafes ... and have found some of the most amazing dishes. This recipe was a surprise as Oatmeal Cake is rarely found on a menu; couldn't wait to get home to try it for myself. Easy to make, and yummy to eat !!

Ingredients For coconut oatmeal cake

  • 1 c
    rolled oats (not instant)
  • 1-1/4 c
    boiling water
  • 8 Tbsp
    unsalted butter,slightly softened
  • 1/2 c
    sugar
  • 1 c
    brown sugar
  • 2
    eggs
  • 1 tsp
    vanilla
  • 1-1/2 c
    flour
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 1/2 tsp
    salt
  • TOPPING:
  • 1 c
    shredded coconut, packed
  • 5 oz
    butter
  • 2/3 c
    brown sugar
  • 1/4 c
    light cream
  • 2/3 c
    walnuts, chopped

How To Make coconut oatmeal cake

    Preheat oven to 350. Lightly butter 9" round cake pan.

    Place oats in a bowl. Add bowling water and let stand 20 minutes.

    Cream butter and sugars. Add eggs and vanilla and stir well. Add rolled oats. Add dry ingredients.

    Pour batter into cake pan. Bake 40 minutes, or until toothpick comes out clean.

    TOPPING: On a cookie sheet, spread out coconut and bake until golden brown - about 4 minutes. Cream butter and then add brown sugar. Stir in cream, nuts and coconut. Spread on cooled cake.
