I found this recipe on Taste of Home. I had to give it a try. It is delicious and easy! It was a winner so say the family and my kids at school! I used the miniature dark chocolate peanut butter cups.

Ingredients For chocolate peanut butter cupcakes

  • 1 box
    choclate cake mix
  • 3 lg
    eggs
  • 1 1/4 c
    water
  • 1/3 c
    oil
  • 1/2 c
    peanut butter
  • 24
    miniature peanut butter cups
  • FROSTING
  • 1 c
    chocolate chips, semi sweet
  • 1/3 c
    peanut butter
  • 2/3 c
    heavy whipping cream
  • miniature peanut butter cups, quartered

How To Make chocolate peanut butter cupcakes

    Preheat oven to 325. Line pan with paper liners.

    Mix all the cake ingredients including the peanut butter on low for 30 seconds then increase speed to medium high for 2 minutes.

    Fill paper- lined cups 1/2 full, place a peanut butter cup in the batter and add 1 tablespoon more batter over this. Repeat until completed. Bake for 15-20 minutes or until test done. Cool 10 minutes in the pan, then remove to wire rack to cool completely.

    For Frosting: Heat whipping cream until just to boiling and pour over chocolate. Whisk until smooth. Stir in peanut butter and mix well. Let stand 10 minutes or spreading consistency. Frost cupcakes, immediately place chopped peanut butter cups on top for garnish if desired. Let stand until set. Makes 2 dozen.

    I added chopped cocktail peanuts over the peanut butter cups as you see in my photo. I think the extra salt helped with the overall flavor. The dark chocolate peanut butter cups were superb! You pick your poison! Enjoy!
