How To Make chocolate chip cookie dough cheese cake

  • 1
Pre-heat your oven to 325 degrees. Line an 8X8 square pan with parchment paper, or spray well with Pam. I spray the parchment paper as well, if I use it.
  • 2
Mix cracker crumbs and butter (no substitutes) together until thoroughly combined. Press mixture into bottom of your 8" pan. Bake crust for about 6 minutes. Remove from oven and set aside to cool, while preparing the next steps.
  • 3
While crust is cooling, prepare the cookie dough, in a medium sized bowl, by combining butter, sugars, salt and vanilla. Mix until smooth, then add flour and mix until just combined then add the chocolate chips and stir by hand until incorporated. Set aside
  • 4
In another medium sized bowl, combine cream cheese and sugar and mix until smooth. Then add the egg and vanilla and mix well.
  • 5
Pour the cheesecake mixture over the cooled, prepared crust, and use spatula to even out the top. Then, get your bowl of cookie dough, and without handling the dough to much, form 1 1/2 inch balls of dough and flatten (not to thin) the balls of dough. Place "clumps" of dough over the top of the cheesecake mixture. Place clumps as evenly as possible making sure you use all the dough. Most of the cheesecake layer will be covered.
  • 6
Place your cheesecake in the oven, and bake for about 30 minutes, or until the top of cookie dough feels dry and firm and the rest of the pan looks "set" if given a gentle shake. Allow cheesecake to cool completely before cutting. Serve cold, or at room temperature. Enjoy!
