I got this recipe out of the alumni cookbook of the college I graduated from. I've made it many times over the past 30 years. It's rich but boy is it good. My boys love it topped with ice cream.

Ingredients For chess cake

  • 2 sticks butter or margarine
  • 1 box brown sugar ( lb.)
  • 1 c. granulated sugar
  • 4 egg yolks
  • 2 c. all purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp salt
  • 1 c. broken nuts
  • 1 1/2 tsp. vanilla extract
  • 4 egg whites

How To Make chess cake

  • 1
    Melt butter; add both sugars and blend well.
  • 2
    Add egg yolks and beat well.
  • 3
    Sift flour, baking powder, and salt. Add to creamed mixture.

    Fold in nuts and vanilla.

    Beat egg whites until stiff; fold into creamed mixture.

    Spread batter in greased and floured 9x13 pan.

    Bake at 350 degrees for 30-45 minutes. Sprinkle with powdered sugar.

    This cake is suppose to sink in the center. If overcooked the outside edges will get hard.
