I was wanting to make something with apples and I usually make pie. Thought this was a great twist on apple cake. My husband and I couldn't quit eating this cake. It was so good with just a hint of spice with the cinnamon.

Ingredients For carmel apple cake

  • TOPPING
  • 1/4 c
    unsalted butter
  • 2/3 c
    packed light brown sugar
  • 1/2 tsp
    roasted cinnamon

    green apples, peeled and cut into 1/4 inch slices
  • CAKE
  • 1 1/3 c
    unbleached all-purpose flour
  • 1 tsp
    baking powder
  • 3/4 tsp
    roasted cinnamon
  • 1/4 tsp
    salt
  • 1 c
    granulated sugar
  • 1/2 c
    unsalted butter, softened
  • 2
    eggs, room temperature
  • 1/2 tsp
    vanilla
  • 1/4 c
    milk

How To Make carmel apple cake

    Heat oven to 325. Spray bottom and sides of an 8 or 9 inch square pan with non stick cooking spray. Be sure to get the corners good so the cake will come out easily. In a small sauce pan melt the 1/4 cup butter over medium heat. Stir in the brown sugar and heat to boiling, then remove from heat. Stir in the 1/2 teaspoon cinnamon. Spread the mixture evenly in the pan. Place apple slices over the mixture very close together making 2 layers so apple is covering the whole bottom of the pan.

    In a medium bowl mix the flour, baking powder, 1/2 teaspoon cinnamon and the salt. In a large mixing bowl beat 1 cup sugar and 1/2 cup butter with mixer on medium high speed until fluffy. Beat in eggs, one at a time until smooth. Add vanilla. Then alternately add flour mixture and milk a little at a time, beating until smooth. spread batter over apples.

    Bake 55 to 60 minutes or til toothpick comes out clean. 55 minutes was perfect for my over. But all ovens may vary by a few minutes. Cool 15 minutes on wire rack. Run a knife or small spatula around the sides of the pan to loosen cake. Put a serving plate upside down over the pan and turn plate and pan over. Be very careful as cake will still be very hot. Remove pan from top of cake.

    This cake is great served warm right out of the oven or the next morning for breakfast with your coffee or tea. Store covered.
