This cake was originated from the infamous "Oatmeal Cake". I decided to add chopped Apples and Dates. There are 2 different sizes in the photo: the Miniature Bundt cake & A Mini Bundt cake. They are great holiday treat. It puts a new spin on the traditional fruit cake.

Ingredients For bundtchess of apples & oats cake

  • 1 1/4 c
    boiling water
  • 1 c
    oatmeal, uncooked
  • 1 stick
    butter
  • 1 c
    brown sugar, firmly packed
  • 1 c
    sugar
  • 3 lg
    eggs
  • 2
    egg whites
  • 1 tsp
    vanilla
  • 1 Tbsp
    baking powder
  • 1 tsp
    baking soda
  • 2 3/4 c
    all purpose flour
  • 3/4 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 1/4 tsp
    nutmeg
  • 1/3 c
    oil
  • 2 lg
    apples, peeled & chopped
  • 1- 2 c
    dates, chopped
  • ICING
  • 1 stick
    butter, melted
  • 4 oz
    coconuts
  • 2 oz
    pecans, chopped
  • 1 c
    brown sugar, firmly packed
  • 8 Tbsp
    evaporated milk

How To Make bundtchess of apples & oats cake

    Preheat oven at 325. Cook Oatmeal according to instructions of Oatmeal box. 1 1/4 c. boiling water and 1 cup Oats. Stir Oatmeal until done. Set aside to cool. [20mins] While Oatmeal cools, cream butter, sugars. Add vanilla and [cooked] Oatmeal.

    In separate bowl, mix together dry ingredients: flour, baking soda, baking powder, salt, cinnamon, & nutmeg. Add chopped Dates. Dates may be sticky and stuck together. Be sure to pull apart dates and add to flour mixture. No clumps.

    In shifts, add dry mixture to Oatmeal mixture in 3 shifts. Add dry mix, add egg. Add dry mix, add egg. Add dry mix, add egg. Add the last of the dry mix to Oatmeal mixture and blend well. Add egg whites. Blend well.

    Add chopped apples to batter. Stir well. Pour batter into well greased 12 cup Bundt pan or a mini bundt pan or a miniature bundt pan. [your choice]

    Bake according to pan size. 12 Cup Bundt pan - 50 mins 6 serving Mini Bundt pan - 25 mins 12 serving Miniature Bundt pan - 20 mins Also perform the toothpick test for dryness

    ICING: Melt butter,add sugar, coconuts, and evaporated milk once cakes are done. If used the mini bundt pan, quickly remove bundt cakes out of its host, invert onto a greased baking sheet. Frost each mini bundt cakes with icing and place bake into oven and broil for max of 2 minutes. Immediately take out of oven. If used 12 cup bundt pan, follow same instructions. Invert whole cake onto greased baking sheet and quickly load icing generously on top of cake and replace in oven and broil for 2 mins or watch carefully to avoid scorching
