I mash the bananas with a potato masher but when in a hurry I have used a food processor and it works fine. Also, I prefer to use 2-4"x8" pans when I make this and freeze the second loaf.

Ingredients For banana bread

2 cflour

1 tspbaking powder

1 tspbaking soda

1/2 tspsalt

1 csugar

2eggs

4very ripe bananas

1 tspvanilla extract

1/2 cvegetable oil

1 tspcinnamon

1 cchopped walnuts or pecans, optional
How To Make banana bread

1Preheat oven to 350 degrees. Spray loaf pan (or 2-8x4 pans.)

2Mash bananas and set aside.

3In a medium bowl combine flour, baking soda and powder, salt.

4In a large bowl cream together eggs and sugar

5Stir in mashed bananas, vanilla, oil and cinnamon.

6Stir in flour mixture, a third at a time, until just combined.

7Pour into prepared pan and bake for an hour. If using smaller pans, check in 40 minutes.
