I was with a friend at a bed and breakfast in Vermont last year and the gentleman that owned the hotel served this with our tea when we arrived. It was so delicious I asked him for the recipe and he emailed it to me.

Ingredients For autumn apple loaf

  • 1/2 c
    unsalted butter, melted and cooled
  • 1 c
    sugar
  • 2
    eggs
  • 2 c
    peeled and grated granny smith apples
  • dash
    cinnamon
  • 1 c
    raisins,plumped in warm water--drain and cool
  • 2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    chopped walnuts---toasted
  • 1 tsp
    vanilla extract

How To Make autumn apple loaf

    Oven at 350 degrees. grease a 9x5x3 bread pan. Mix dry ingreds. in small bowl. In large bowl beat the butter,sugar and 1 of the eggs til smooth.Add the second egg and beat well. Stir in vanilla and cinnamon. Stir in apples, raisins and nuts. Put dry ingreds into wet ingreds. until just moistened. bake 50-60 mins. or until toothpick inserted comes out clean. Let stand 10 mins. and remove from pan and cool on rack. ENJOY!!!
