This recipe was posted in our newspaper. It was made by my friend and also grandmother to 2 of my grandchildren. Her name is Glenda Strouse she told me she got this recipe 30 years ago and she actually served this to Tom Coughlin (now the Giants coach) when he came to her house in the early 80s to recrute her son Tommy to play for Boston College. I thought it was fitting to make it for the Super Bowl this year.

Ingredients For apple dapple cake

  • 2 c
    granulated sugar
  • 3 c
    all purpose flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 1 c
    oil
  • 3
    eggs
  • 1 tsp
    vanilla
  • 4 c
    chopped apples
  • SECOND STEP - TOPPING
  • 1 c
    brown sugar
  • 1/4 c
    milk
  • 1
    stick butter
  • 1/2 c
    chopped walnuts or any type of nut

How To Make apple dapple cake

    Mix all dry ingredients together and set aside.

    Put the wet ingredients, not the apples, in your stand up mixer or a mixing bowl and mix until blended. Gradually add the dry ingredients to the wet. Batter will be stiff. Fold in apples.

    Smooth batter into a greased 13 x 9 pan and bake in a preheated oven, 350°, for 30 to 40 minutes. I baked mine to 35 minutes.

    5 to 8 minutes before the cake is done baking, 35 minutes, bring to a boil for a few minutes about 4 minutes, 1 cup of brown sugar, 1/4 cup milk and one stick of butter. Turn off heat and add nuts, stir and pour over cake. Place cake back in oven for about 5 minutes more or until the top is bubbly and browned.

    I made this recipe according to her instructions but I am sure you can substitute applesauce for the oil and use splenda. The cake is very moist, good and honestly isn't overly sweet, as I thought it would be.
