Ingredients For aloha cake

  • CAKE:
  • 18 oz
    box yellow cake mix
  • 3/4 c
    vegetable oil
  • 3 lg
    eggs
  • 11 oz
    can mandarin oranges, with juice (do not drain)
  • 1/2 tsp
    vanilla extract
  • FROSTING:
  • 1 box
    instant coconut pudding mix (4-serving size)
  • 20 oz
    can crushed pineapple with juice (do not drain)
  • 8 oz
    can whipped topping (like cool whip)

How To Make aloha cake

    Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish; set aside.

    Mix together the cake mix, oil, eggs, mandarin oranges and vanilla extract with electric mixer. Beat 2 minutes until well-blended. The oranges will break up into tiny bits during the beating.

    Pour batter into baking dish, and bake in preheated oven for 30 to 35 minutes. Let cool completely. You can also make this in a jelly roll pan (decreasing baking time to about 15 minutes.)

    For the frosting: Beat the coconut pudding and pineapple together for 2 minutes or until thick. Fold in the whipped topping. Spread over the cooled cake and chill until ready to serve. Serve chilled.
