How To Make Copycat Aunt Jemima's Pancake Mix

Ingredients

  • 1 cup all-purpose flour
  • tsp baking powder
  • 1 cup pancake mix, of your choice, preferably Bisquick
  • ¼ cup granulated sugar
  • ¼ cup non-dairy creamer powder
  • 1 egg
  • 8 oz lemon lime soda, preferably 7UP®

To Serve:

  • ¼ cup fresh blueberries, per serving
  • 1 tsp powdered sugar, per serving

Instructions

  1. Sift together the flour, pancake mix, sugar, baking powder, and creamer powder. Set aside.

  2. Mix the egg and lemon lime soda into a mixing bowl until evenly incorporated.

  3. Whisk the flour mixture and soda mixture until evenly incorporated.

  4. Using a griddle or a pan, fry the pancakes until golden brown on both sides.

  5. Serve with any of your favorite accompaniments like pancake syrups (or any fruit flavored syrups), fresh fruits, fruit jams, or butter.
