Ingredients For cabbage and bean soup

  • 2 qts. chicken broth
  • 1 med. head cabbage (cut into 1/2-in. cubes)
  • 1 med. onion, chopped
  • 1 C. celery, chopped
  • 1 C. green pepper, chopped
  • 1 Tbs. garlic, chopped
  • one 14.5-oz. can chopped tomatoes
  • 1 can kidney beans, rinsed and drained
  • 1/2 C. fresh parsley, chopped
  • 1 Tbs. fresh basil,chopped
  • 1/4 tsp. salt
  • pepper to taste

How To Make cabbage and bean soup

    Bring the chicken broth to a boil in a large pot. Add the cabbage, onion, celery, pepper, garlic, and tomatoes. Reduce heat to low and simmer for 20 minutes. Add the kidney beans, parsley, basil, salt, and pepper. Simmer an additional 20 minutes.
