GREAT BREAKFAST ON THE GO! Lightly sweet-- wholesome- filling! I created this recipe from a Baked Oatmeal recipe-- that featured applesauce instead of banana and didn't have Bisquick in it (I replaced 1/2 C of the oats with Bisquick)-- I however, really like the cake like texture it has now-- it holds together enough so you can pick up a square and eat it by hand. I have since come up with other versions: Banana/Chocolate Chip, Spiced Peach, Cinnamon Apple, Pumpkin/Raisin... I'm working on coming up with a Carrot Cake Baked Oatmeal Square version-- I'll post it here when I do!

Ingredients For banana/walnut baked oatmeal squares :)

  • 1 Tbsp
    cooking oil or melted coconut oil (to be extra healthy)
  • 2-3
    very ripe bananas, mashed up
  • 1/2 c
    brown sugar, firmly packed
  • 2 lg
    eggs
  • 2 1/2 c
    raw rolled or old fashioned oats
  • 1/2 c
    bisquick
  • 1/2 c
    toasted walnut pieces (i lightly toast in the microwave)
  • 2 tsp
    baking powder
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    ground nutmeg
  • 1 c
    milk
  • sugar in the raw brand turbinado sugar

How To Make banana/walnut baked oatmeal squares :)

    Pre-heat your oven to 350 degrees

    Spray a 13" x 9" pan with pan coating spray-- cover sides and bottom well.

    In a large bowl, stir together: oil, bananas, sugar and eggs.

    Add in dry ingredients: oats, Bisquick, baking powder, spices, walnuts-- and milk. Mix well-- be sure to break up the brown sugar and incorporate it.

    Pour into the prepared pan

    If desired-- I let bake for about 20 minutes-- pull out and sprinkle generously with Sugar in the Raw brand, Turbinado Sugar. (It's course and adds a nice bit of a crunch to the top!) Return to the oven for an additional 10-15 minutes.

    Let cool-- then cut into squares-- I make about 12 servings from one pan. Keep leftovers in the refrigerator--lightly warm back up. I like to re-heat in my toaster oven :)
