    Coat coffee cup with cooking spray. Add eggs and milk and beat until well blended.

    Microwave on high 45 seconds. Stir, microwave 30-45 more seconds. Stir and microwave up to an additional 45 seconds.

    Top with cheese and add salt and pepper to taste.
