Ingredients For cheesy quichettes

  • 12 slice
    bacon,,crisp cooked and chopped
  • 6 lg
    eggs,,beaten
  • 1/4 c
    whole milk
  • 1 1/2 c
    refrigerated shredded hash brown potaoes
  • 1/4 c
    chopped fresh parsley
  • 1/2 tsp
    salt
  • 1 1/2 c
    (6oz) shredded mexican cheese blend with jalapeno peppers

How To Make cheesy quichettes

  • 1
    Preheat oven to 400. Lightly spray 12 standard(2-1/2") muffin cups with nonstick cooking spray.

    Place equal amounts of bacon into prepared muffin cups. Beat eggs and milk in medium bowl. add potatoes,parsley and salt;mix well. Spoon evenly into muffin cups.

    Bake 15 minutes or until knife inserted into centers come out almost clean. Sprinkle with cheese; let stand 3 minutes or until cheese melts. (Egg mixture will continue to cook while standing.*) To remove from pan,gently run knife around outer edges and lift out with fork. *standing also allows for easier removal of quichettes from pan.
