I have no clue where the name came from, this was something that was made for me ages ago that I enjoy. I have found that this recipe is more about technique than ingredients, try not to get distracted while doing this one, lol. The kids I babysit for love these for more than just breakfast. Even my fiance who hates bread scarfs these down!

Ingredients For breakfast eggy baskets

    eggs
  • 2
    slices texas toast bread or regular sandwich bread
  • nonstick cooking spray or butter
  • few dash
    egg spice or just salt & pepper
  • ALICIA'S EGG SPICE
  • this is approx what i use when i make enough "egg spice" to fill a small empty spice jar and keep available. works great as a seasoning salt on other dishes as well!
  • 3 Tbsp
    sea salt
  • 1 1/2 Tbsp
    ground black pepper
  • 2 Tbsp
    paprika
  • 1/2 tsp
    garlic powder
  • 2 tsp
    cayenne pepper (optional)

How To Make breakfast eggy baskets

    The ingredients listed above are for one plate/serving, so calculate how many eggs and bread slices you'll need. Using a round cookie cutter/biscuit cutter or even careful tearing, remove a circle of bread from the very middle of each slice and set aside.

    Get your pan hot, and lightly spray each side of the bread with hole as well as the pan with the cooking spray (butter flavored, yum!) or lightly butter each with softened butter/margarine.

    Place the bread in the hot pan and carefully crack one egg into the center. Sprinkle with a dash of "Egg spice". Depending on how firm you like the yolk either crack it in right away (for a hard yolk) or wait about 20-30 seconds (for a runny yolk).

    Watch the edges of the bread on the pan and the egg as they cook, flip when the egg whites turn mostly white and/or the bread on the pan side is looking golden brown. You may need another set of hands if the pan looks too dry to give it a quick shot of nonstick spray/butter.

    Cook until the 2nd side of the bread is golden brown and remove to plate.

    I like to serve this with bacon or sausage links and fresh fruit for a very filling and tasty breakfast. :)
