baked egg muffins

You can use bacon, ham, sausage, etc. for the meat. You can also add any spices you like, and the type of cheese you like. I use a deep muffin tin. Some people don't like the syrup, and some do. I do 3 of each.

Ingredients For baked egg muffins

  • 6 slice
    bacon - cooked and crumbled
  • 1 1/2 Tbsp
    butter, melted
  • 1 1/2 Tbsp
    maple syrup -optional
  • 6 slice
    bread, crust removed
  • 6
    eggs
  • salt and pepper to your liking
  • 6 Tbsp
    heavy cream (i use evporated milk or half & half)
  • 6 Tbsp
    shredded cheddar cheese (or what you like)

How To Make baked egg muffins

    Prepare bacon, drain, crumble and set aside.

    Preheat oven to 325. Grease muffin cups. Combine the melted butter and syrup in a small bowl. Remove crust from bread, and flatten with a rolling pin. Brush bread with the butter mixture. Line muffin cups with the flat bread.

    Bake in a preheated oven until the bread is crisp,about 4-5 minutes. Sprinkle crumbled bacon into each cup. Scramble 1 egg with salt, pepper, cheese and the cream. Bake until whites are set about 11-14 minutes, or until they are cooked to your liking.
