We first enjoyed this breakfast on vacation in Angel Fire, New Mexico. We went riding every morning for a couple of hours and even though it was June the air in the morning was crisp and cool. The first morning we finished our ride we found this little diner. If I remember right the name on the menu was The Hungry Breakfast. There was no description but the name sounded interesting so we all ordered it. That became our place for breakfast every morning for the ten days we were there. and we brought it back home with us. Can be easily modified for potlucks. Enjoy and let me know what you think.

Ingredients For an angelfire breakfast

  • 1 1/2 lb
    lean ground beef at least 85%
  • 2 can
    of pinto beans 15 oz.
  • 1 can
    chopped green chillies
  • 1
    medium chopped onion
  • 2 clove
    of minced garlic
  • 2-3
    green onions
  • salt and pepper to taste
  • green tabasco (optional)

How To Make an angelfire breakfast

  • 1
    Season the meat and form four patties. Grill the patties to medium done
  • 2
    Open and dump into a pan the beans and green chilis. Chopped the onion and mince the garlic and add to the beans. Cook over medium heat until the onions are translucent
  • 3
    Place the patties on plates and cover with the beans. Garnish with green onions and serve with hash browns or French fries
