Wanting something different, I made this greek-style dish. You can have it as an appetizer or as a meal, served w/ a salad.

Ingredients For fabulous greek-style frittata

  • 1/4 c
    olive oil
  • 1 Tbsp
    white wine vinegar
  • 3 tsp
    minced garlic
  • 2 tsp
    dried oregano
  • 1 tsp
    pepper
  • 1/2 tsp
    salt
  • 1 c
    red bell pepper, diced
  • 1/2 c
    red onion, diced
  • 6 lg
    pitted kalamta olives, halved
  • 10 lg
    eggs
  • 1/3 c
    reduecd-fat crumbled feta cheese.

How To Make fabulous greek-style frittata

    In medium bowl, whisk together oil and vinegar. Whisk in garlic, oregano, pepper and salt. Stir in red bell pepper, onion and olives.

    Heat oven to 400. Spray a 9" pie pan w/ cooking spray. In bowl, beat eggs. Drain pepper mix, blend into eggs.

    Pour into pan. Bake for 15 mins. Dot the top w/ feta cheese. Bake additional 20 mins, or until set. Sprinkle top lightly w/ olive oil. Slice into 4 slices.
