My sister makes this everytime we go to visit her in Pennsylvania. I don't know one family member who doesn't like it. Some of our best breakfasts were spent out on her deck in the summer, in our p.j.'s well into the afternoon, telling stories, laughing and munching on this with our coffee! Try it! I'm positive you and your loved ones are going to love it!

Ingredients For aunt jodi's breakfast extravaganza

  • 1 pkg
    17.3oz frozen puff pastry (thawed)
  • 6
    eggs
  • 1
    15oz container of ricotta cheese
  • 4 - 6 slice
    of your favorite ham (cubed)
  • 1 1/2 c
    extra sharp cheddar cheese (grated)
  • 1 pkg
    10oz spinach (thawed and well drained)
  • 1 c
    red pepper (chopped small pieces)
  • 5
    dashes of your favorite hot sauce

    1. Roll out pastry - one to 11" and one to 12" (leave square) Grease spring form pan, and place 12" in bottom of pan and up sides, set aside

    2. In a bowl, beat eggs - put aside 1T for later. Add Ricotta Cheese, Hot Sauce and Spinach to eggs, mix well

    3. Now start layering all ingredients in pan. Ham, Cheese, Egg Mixture, Red pepper and continue until all ingredients are used.

    Cover with 11" pastry - tuck and seal. Brush top with the 1T of egg, make 5/6 slits in top

    bake in 425 degree oven for Approx. 45 - 55 minutes. Let cool and release from pan. Serve and ENJOY!!! :)
