Ingredients For zucchini quiche

  • 3 sm
    zucchini
  • 1/2 c
    parmesan cheese
  • 9
    eggs
  • 1/2 tsp
    dried oregano
  • 5 Tbsp
    butter
  • 1/4 c
    onion, chopped
  • 1/4 tsp
    salt
  • 1 1/2 c
    milk
  • 1/2 c
    baking mix

How To Make zucchini quiche

  • 1
    Cook zucchini and onions in half the butter with oregano and salt till tender (about 5 minutes).

    In blender, mix eggs, milk, cheese, Bisquick, salt and remaining melted butter. Mix well, about two minutes. Pour into 13-inch dish or pie plate. Spread zucchini all over top.

    Bake 30 to 40 minutes at 375 degrees.
