Ingredients For quiche

19- or 10-in pie crust

1egg white
-
1/4 - 1/3 lbgrated cheese (gruyere is best; cheddar is good too)

3eggs
-
1/2 clight cream (or half and half)

1 cheavy cream
-
1/4 tspground nutmeg
-
1/2 tspsalt
-
1/4 tspground black pepper
-
5 or 6bacon strips, cut into 1" pieces & cooked
-
1/4 lbsliced ham, fried slightly (to bring out flavor)

1 bunchscallions, chopped and sauteed in butter
-
10 ozfresh mushrooms, sliced & sauteed in butter

1 bunchfresh spinach, chopped, steamed, & drained
How To Make quiche

1Beat egg white slightly, and spread a thin layer of egg white over uncooked pie crust. Prebake the pie crust at 425 F (400 for a glass pan) for 10-15 minutes. Let cool.

2Place cheese in crust. Add one or more of the fillings (about 1 - 1 1/2 cups filling(s) total).

3Mix eggs, both kinds of cream, and spices. Pour gently on top of cheese and filling(s).

4Bake at 375 F (350 for glass pan) for 45 minutes, or until a knife inserted in the middle comes out clean.
