Can I tell you that I LOVE, LOVE, LOVE, Banana Bread. I have my traditional stand by recipe that I have been making for years and I LOVE. However, I recently found this one. It is amazing. I like that it is somewhat more healthy than my traditional recipe. I have been able to make this with several varations, all were YUMMY.

Ingredients For peanut butter banana light bread

  • 1 1/2 c
    mashed bananas
  • 1/3 c
    plain fat free yogurt
  • 1/3 c
    creamy peanut butter
  • 3 Tbsp
    melted butter
  • 2 lg
    eggs
  • 1/2 c
    sugar
  • 1/2 c
    packed brown sugar
  • 1 1/2 c
    all purpose flour
  • 1/4 c
    ground flaxseed
  • 3/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/8 tsp
    allspice
  • 2 Tbsp
    chopped dry roasted peanuts
  • cooking spray
  • GLAZE
  • 1/3 c
    powdered sugar
  • 1 Tbsp
    skim milk
  • 1 Tbsp
    creamy peanut butter

How To Make peanut butter banana light bread

    Prheat oven to 350 degrees. To prepare bread, combine first 5 ingredients in a large bowl; beat with a mixer at medium speed. Add granulated and brown sugars; beat until blended.

    Spoon flour into dry measuring cups for accuracy, then in a separate small bowl combine the flour with the next five ingredients. In small batches add flour mixture to banana mixture; beat just until blended. Stir in nuts. Pour batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; cool 10 minutes in pan on a wire rack. Remove bread from pan; cool.

    To prepare glaze, combine powdered sugar, milk, and 1 tablespoon peanut butter in a small bowl, stirring with a whisk. Drizzle glaze over bread.
