Ingredients For mike's irish soda bread

  • 1 c
    sugar
  • 1/2 lb
    butter, softened
  • 4
    eggs
  • 6 c
    flour
  • 2 tsp
    salt
  • 1 tsp
    baking soda
  • 6 tsp
    baking powder
  • 2 1/2 c
    buttermilk
  • 1 c
    raisins

How To Make mike's irish soda bread

    Cream the butter and sugar well until light and fluffy, about 5 minutes. Add eggs 1 at a time, waiting between until each is incorporated.

    Sift all the dry ingredients together in a separate bowl. Add the flour mixture and buttermilk alternating beginning and ending with the buttermilk on slow speed of mixer. Add raisins and mix in well.

    Spoon into two greased large loaf pans or three medium sized pans. Bake at 325 degrees. For two large pans bake for 1 1/2 hours. For three medium pans, bake for an hour and check for doneness. Cool on a wire rack.
