I found this recipe in Taste of Home magazine but changed it up a bit to my liking. These are Czech pastries and are a popular item in Texas as we have probably more Kolache shops than Donut shops. This is an easy recipe and you can use any kind of filling you prefer. I use jams and jellies or you can use pie filling of your choice. I sometimes use links of sausage(which are the most popular here,with slices of Jalapenos) A very delicious,soft,tender pastry that you will surely enjoy with a hot cup of coffee or beverage of your choice.

Ingredients For kolaches

  • 1 pkg
    (1/4 oz.) active dry yeast
  • 1/4 c
    warm water(110-115 degrees)
  • 3/4 c
    warm 2% milk(110-115 degrees)
  • 1/3 c
    sugar
  • 1/3 c
    shortening
  • 1 tsp
    salt
  • 1/8 tsp
    ground nutmeg
  • 2
    eggs
  • 4 c
    all purpose flour
  • 1 Tbsp
    various fillings you prefer,strawberry jam, peach, blackberry,apricot or pie fillings of your choice.
  • TOPPING:
  • 1
    (8-ounce) package cream cheese
  • 1/4 c
    sugar
  • 1
    egg yolk
  • 1/2 tsp
    vanilla extract

How To Make kolaches

    Prepare topping: combine cream cheese,1/4 cup sugar,egg yolk,and vanilla and blend thouroughly. Set aside in refrigerator.

    In a large bowl, dissolve yeast in warm water. Add milk, sugar,shortening,salt, nutmeg, eggs and 2 cups of flour. Beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured surface;knead until smooth and elastic,about 6-8 minutes.

    Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled,about 1 hour. (I use my oven with the oven light on)

    Punch dough down. divide in half;shape each half into 12 balls. Place 3 inches apart on a greased baking sheets.(I use parchment paper on the baking sheets)Flatten each ball to a 3 inche circle. cover and let rise in a warm place until doubled,about 30 minutes.

    Make a depression in the center of each roll;add a rounded tablespoon of cream cheese filling, then a tablespoon of the preferred filling. Bake at 350 degrees for 15-18 minutes or until golden brown. Remove from pans to wire racks. If you prefer to use a meat flavor such as ham or sausage link, just roll meat into the flattened dough and place seam side down.
