hubby's southern cornbread

This is the type of cornbread my husband grew up on. I changed a few things, that I believe makes it even better...BUTTER!!! I also add some corn meal to the skillet as I'm heating it up...gives the bread a nice crunch... My photos..

Ingredients For hubby's southern cornbread

  • 1 c
    self rising cornmeal
  • 1/2 c
    self rising flour
  • 1 - 1 1/4 c
    buttermilk
  • 2
    eggs
  • 1/4 c
    butter
  • 1 Tbsp
    oil
  • cornmeal
    about a tablespoon

How To Make hubby's southern cornbread

    Preheat oven to 375 degree F. Place butter and oil in iron skillet. Place skillet in the oven for roughly 10 - 15 minutes till butter is melted and pan is good and hot. Sprinkle pan with cornmeal after about 5 minutes ( once butter is melted ) Being careful not to burn yourself. Cornmeal is optional ( I like it as it gives it a nice crunch ). If you don't have an iron skillet; grease an 8 inch baking pan, and bake till golden.

    Combine all ingredients and mix well. Pour batter into heated skillet. Should sizzle as it hits the pan. Bake between 34 - 40 minutes, or until golden. Enjoy with a big slather of butter.

    This is not a real thick cornbread. It's the thickness my husband prefers.
