Grandma made this cornbread recipe (from scratch) often. She liked it cold, in a bowl with milk over it, for breakfast. She kept it in the frig when she had leftovers and used it up over a week's time.

  • 1 1/2 c
    yellow cornmeal
  • 2 1/2 c
    milk
  • 2 c
    all purpose flour
  • 1 Tbsp
    baking powder
  • 1 tsp
    salt
  • 2/3 c
    sugar
  • 2 lg
    eggs
  • 1/2 c
    corn oil

    Preheat oven to 400 degrees. In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Meanwhile grease a 9 by 13 inch baking pan. In a large bowl, stir together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan. Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean.
