This is one of my creations. It came about from my Greek Bread recipe and my family's love of artichokes. Now, oh my, it better accompany me, along with the Greek Bread, for our Labor Day or Family Reunion gatherings..I hope you will try and enjoy as much as we do.! Bon Appetite!! Also, this may be served as a side or as a meal with a salad and a nice glass of red wine.

Ingredients For artichoke bread

  • 1/4 c
    butter, melted
  • 3 cloves
    garlic, minced
  • 2 c
    roasted, marinated artichoke hearts, chopped
  • 1 c
    shredded monterey jack cheese
  • 1 c
    grated parmesan or pecorino romano cheese
  • 1/2 c
    sour cream
  • 1/2 c
    hellmann's real mayonnaise (no miracle whip)
  • 3
    green onions, chopped
  • 1/2 c
    sharp cheddar cheese, shredded
  • 1
    loaf french or italian bread

How To Make artichoke bread

    Preheat oven to 350 degrees. Add the garlic to the melted butter and set aside for a minute. Mix the artichokes, jack cheese, parmesan cheese, green onions,sour cream and mayo. Add the butter and garlic mixture.

    Cut bread in half lengthwise. Pull some of the bread out of the top and bottom halves to make a "bed". Add about 1/2 of the pulled bread to the artichoke mixture. Stir to blend. Spoon artichoke mixture into the bread shells and sprinkle with the sharp cheddar cheese. (you may wish to use more. I sometimes do) Place on a baking sheet and cover with foil that has been sprayed with cooking spray. Bake for 25 minutes. Remove foil and bake another 5 minutes. Cool slightly and cut into slices......mmmmmm
