enid's buttermilk oatmeal bread (breadmaker)

This recipe was adapted and tweaked by my partner Enid from a recipe in the book "Whole Grain Breads by Machine or Hand" by Beatrice Ojakangas. Very popular with friends. Dozens and dozens of loaves have been given to grateful friends, neighbors, and coworkers. Important Tip: The Red Star yeast is the key to success with this bread.

Ingredients For enid's buttermilk oatmeal bread (breadmaker)

  • 1 1/2 c
    boiling water
  • 1/2 c
    old-fashioned rolled oats
  • 3 Tbsp
    olive oil
  • 3 Tbsp
    sugar
  • 1 1/2 tsp
    salt
  • 3 Tbsp
    buttermilk powder
  • 3 c
    bread flour
  • 1/2 c
    whole wheat flour
  • 2 tsp
    red star active dry yeast

How To Make enid's buttermilk oatmeal bread (breadmaker)

    Add rolled oats to boiling water. Let stand 15 minutes or until cooled to about 115 degrees.

    Put all remaining dry ingredients including Red Star yeast into bread maker.

    Put olive oil and oats into bread maker on top of dry ingredients. Start bread machine using either rapid or regular bake cycle.

    Remove at end of cycle. Let bread sit in pan for 1-2 minutes before tipping bread out of pan. Cool on rack.
