Ingredients For jumbo pumpkin pecan muffins

  • 2 1/2 c
    all purpose flour
  • 1/2 c
    granulated sugar
  • 1/4 c
    brown sugar, firmly packed
  • 2 tsp
    pumpkin pie spice
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2
    eggs
  • 1 c
    pumpkin, canned (not pie mix)
  • 1/2 c
    buttermilk
  • 1/4 c
    vegetable oil
  • 1 tsp
    vanilla
  • 1/2 c
    chopped pecans
  • TOPPING
  • 1/3 c
    brown sugar, firmly packed
  • 1/3 c
    finely chopped pecans
  • 1/4 c
    all purpose flour
  • 1/4 c
    cold butter

How To Make jumbo pumpkin pecan muffins

    Combine first 7 ingredients. In another bowl, whisk eggs, pumpkin, buttermilk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in pecans.

    In small bowl combine topping ingredients. Cut in butter.

    Prepare a 12 ct muffin tin with Pam. Fill each cup wit 2/3 of batter. Top each with topping.

    Bake at 350F for 20-25 minutes or until wooden pick comes out clean. Cool for 5 minutes and then turn onto a baking rack to cool.
