Ingredients For cinnamon-apple muffins

  • STREUSEL TOPPING
  • 3 Tbsp
    flour
  • 3 Tbsp
    packed brown sugar
  • 2 Tbsp
    cold butter
  • 1/4 tsp
    cinnamon
  • MUFFINS
  • 3
    apples, peeled and chopped
  • 4 Tbsp
    packed brown sugar
  • 1 1/2 Tbsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 2 1/2 c
    flour
  • 1/2 c
    sugar
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    milk
  • 1 stick
    butter, melted
  • 1 lg
    egg
  • tsp
    vanilla extract

How To Make cinnamon-apple muffins

    Preheat oven to 400. Line a standard size 12 cup muffin tin with paper liners.

    For streusel: Combine 3 tablespoons flour, 3 tablespoons brown sugar, and 1/4 teaspoon of cinnamon. Cut in 2 tablespoons cold butter until it resembles a coarse crumb. Set aside.

    For muffins: Combine apples, cinnamon, brown sugar and nutmeg. Set aside.

    In a large bowl combine flour, sugar, baking powder and salt.

    In a small bowl combine milk, egg, butter and vanilla.

    With a wooden spoon add the wet ingredients to the dry ingredients just before they come together fold in apples DO NOT OVER MIX.

    Divide batter evenly between each muffin cup and and top each with streusel. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.
