blueberry muffins

Got this recipe from a cookbook that was put together as a fundraiser when my daughter was a cheerleader in high school(2003). I made them for the Crew my husband works with & everyone seemed to like them. (Including my 19 month old Grandson, lol.)

Ingredients For blueberry muffins

  • 1/4 c
    butter (softened)
  • 1 c
    sugar
  • 1
    egg
  • 3/4 c
    milk
  • 1/4 tsp
    vanilla
  • 1 3/4 c
    plus 1 tbs flour, divided
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    blueberries (fresh or frozen)

How To Make blueberry muffins

    Pre heat oven to 425°.

    Cream butter and sugar until well blended. Should be light & fluffy.

    Beat in egg, milk and vanilla until nearly smooth.

    In a small bowl, stir 1 3/4 c flour, baking powder and salt.

    Add to Sugar & Milk mixture until all dry ingredients are moistened (will be a little lumpy)

    Lightly toss blueberries with remaining flour & gently fold into batter.

    Spoon ( I use an Ice Cream Scoop) into prepared muffin pans (I use bakers Joy).

    Bake 25 minutes until Golden Brown.
