I have this old recipe from one of those Pillsbury baking books you see by the grocery store registers. Its one of my favorites. It makes me wonder, now, if you couldn't use pie filling with a different fruit on the bottom? How about cherry pie filling on the bottom and blueberries or cranberries on top? Hmm...

Ingredients For country apple coffeecake

  • 2 Tbsp
    butter
  • 1 1/2 c
    peeled and diced apples
  • 1 can
    flaky biscuits from the store
  • 1/3 c
    brown sugar
  • 1/3 c
    corn syrup
  • 1/4 tsp
    cinnamon
  • 1
    egg
  • 1/2 c
    chopped nuts
  • ICING
  • 1/3 c
    powdered sugar
  • 1/4 tsp
    vanilla
  • 1-2 tsp
    milk

How To Make country apple coffeecake

    Set your oven to 350 degrees. Use 1 Tablespoon of the butter to spread in your pan, an 8" square pan or 9" round (I prefer stoneware or glass). Put 1 cup of apples in the bottom of the pan.

    Separate the biscuits and cut them each in fourths. Put them all in the pan, over the apples, points up. Top with remaining apples.

    In a small bowl mix the rest of the butter, the brown sugar, cinnamon, corn syrup and the egg. Mix well, taking 2 or 3 minutes. Add the nuts (I used pecans) and pour all of this into the pan. Bake 35-45 minutes. Pull from oven when golden brown and set on a rack to cool a few minutes.

    Mix the icing ingredients together until smooth. Drizzle over the finished coffeecake after it has had an initial cool down. (about 5-10 minutes). See how beautiful it is? Almost too pretty to eat! Almost...but not quite.
