Excellent use for leftover bananas. Just made them as muffins. Bake for 25 minutes.

Ingredients For banana bread

  • 2 c
    flour
  • 3/4 c
    sugar
  • 3/4 tsp
    baking soda
  • 3
    very ripe bananas, mashed well
  • 1/4 c
    vanilla yogurt
  • 2
    eggs, beaten lightly
  • 6 Tbsp
    butter, melted
  • 1 tsp
    vanilla

How To Make banana bread

    Preheat oven to 350 degrees.

    Butter and flour 9 x 5 inch loaf pan.

    Whisk flour, sugar and baking soda together in a large bowl.

    Mix mashed bananas, yogurt, eggs, butter and vanilla with wooden spoon until well blended.

    Lightly fold the banana mixture into the dry ingredients. Pour into loaf pan.

    Bake about 55 minutes, until golden brown. Cool 15 minutes in pan.
