Trying to cook & eat healthier, I came up with this version of a recipe with suggestions from THE OLD FARMERS ALMANAC COOKBOOK. The secret ingredient for the protein & fiber comes from the use of refried beans. SURPRISE Cut even more calories by using Splenda instead of the Honey. Eating one of these & a glass of skim milk, or cup of coffee & you feel full & satisfied. I was pretty proud of the outcome & my husband really loved them. That especially makes me happy. The Recipe makes 24 muffins, so you can store the extra in the freezer. GUILT FREE DESSERT. MUFFINS AREN'T REAL SWEET.

Ingredients For my way muffins (fiber enriched)

  • 1 c
    whole grain whole wheat flour
  • 2 c
    all purpose flour
  • 1 tsp
    salt
  • 1 Tbsp
    baking powder
  • 2 lg
    eggs, room temperature
  • 1 c
    fat free refried beans
  • 3/4 c
    honey
  • 1/2 c
    vegetable oil
  • 1 c
    1% milk, fat free or skim
  • 1 c
    chopped nuts (i used pecans)
  • 1 c
    unsweetened applesauce
  • 2/3 c
    raisins (plumped for 5 minutes in microwave)
  • 1 Tbsp
    vanilla extract (i used vanilla bean paste)
  • 2 tsp
    butter extract

How To Make my way muffins (fiber enriched)

    Preheat oven to 400 degrees F. Add cupcake liners to muffin tins, and set aside till needed. Pour raisins into a small bowl, cover with saran wrap, then microwave for 5 minutes, set aside to cool and drain before using. This is my version of the recipe, not all of the ingredients I used were in the original recipe. I got the idea for this recipe from this book.

    In a large bowl add the dry ingredients, salt, baking powder, all purpose flour and whole wheat flour, then stir to blend together.

    Then in a medium size bowl or 4 cup measure add the eggs, refried beans, applesauce,nuts and beat well till blended together.

    Add the milk to the dry mixture and beat till absorbed.

    Now add the beaten bean mixture to the flour mixture and continue to beat until well blended.

    Add the drained and plumped raisins and stir with a spoon to blend into batter.

    Add both extracts, and blend together. Then spoon batter into muffin cups about 3/4 full, place in oven and bake for 20 minutes. Remove from oven, allow to cool, and enjoy with a cup of coffee or a cup of skim milk.
