My husband works 6 days per week, & we hardly if ever have time for breakfast or brunch together. I decided on Sunday I would make him a nice Country Irish Brunch, with HEARTY FLAVORFUL BISCUITS this is the recipe I came up with. They are somewhat similar to the 7 up biscuits except for the extra add ins, plus I used Mountain Dew. He loved the Country Potatoes with Peppers, then red & yellow onions, & minced garlic. Then when they were all but done I made wells in the potatoes & cracked eggs in them then covered them with a lid, allowed them to cook. Served W sausages & Wa La-Brunch

Ingredients For bacon & cheddar brunch biscuits

  • 2 1/2 c
    bisquick plus extra for rolling about 1 cup more
  • 3/4 c
    mountain dew soda, or any lemon lime soda
  • 1/2 stick
    butter melted
  • 3/4 c
    sour cream
  • 1 Tbsp
    dried chopped chive
  • 1/2 c
    heavy whipping cream (or use evaporated milk)
  • 1 c
    shredded cheddar cheese
  • 2/3 c
    real bacon bits
  • butter flavored cooking spray to spray top before baking

    This is one of the ways I like to show my husband how much I appreciate him by making him a nice brunch with all of his favorite foods. He loved it so much, he ate the left overs for dinner. These are some of the ingredients I used to make the biscuits. PREHEAT THE OVEN TO 400 DEGREES F.

    In a medium size bowl, add the Bisquick then add in the real bacon bits, sour cream, cheddar cheese,chive & whipping cream. Then stir with a large spoon to blend the ingredients together. Now add in the mountain dew, then stir till it is mixed together and looks sticky(tacky).

    You can add the extra cup of flour on the counter top, but I prefer to do it in the bowl to prevent making such a big mess. Then work the additional flour in until you can shape into desired size biscuits.

    Melt butter in baking pan, I used 2 pans of equal size, had 8 in one and 6 in the other pan. Add the biscuits, and then spray lightly with butter flavored cooking spray.

    Bake in preheated 400 degree F. oven for 20 to 22 minutes. Or until biscuits are golden brown or as desired.

    Serve with butter or favorite jam while still hot. Left overs heat very well in microwave for about 20 to 30 seconds, add jam & butter as desired.
