sweet potato biscuits

Have any left over mashed sweet potatoes? These are perfect biscuits to use the left overs with. I like to drizzle them w/maple syrup, yum!

Ingredients For sweet potato biscuits

  • 1 c
    flour
  • 3 tsp
    baking powder
  • 2 tsp
    sugar
  • 1/2 tsp
    salt
  • 2 Tbsp
    butter, cut up
  • 3/4 c
    mashed sweet potato
  • 1/4 c
    milk

How To Make sweet potato biscuits

    Heat oven to 400. Place parchment paper on a lg baking sheet. In bowl, stir together flour, baking powder, sugar and salt.

    Cut in butter until it resembles coarse crumbs. Mix in sweet potatoes and enough milk to make a soft dough. Place dough on floured surface, out to 1/2"-thick.

    Cut dough into circles w/ a biscuit cutter or a glass. Place biscuits 1" apart on baking sheet. Bake 12-15 mins, or until golden brown.
