This sounds like the best spinach dip on toast! I am ready for it right now! This recipe was in the Recipes from the Heart Cookbook from The Pampered Chef. Totally, a great appetizer, any time of the year!

Ingredients For monterey spinach melts

  • 4 oz
    monterey jack cheese
  • 1/4 c
    mayonnaise (i use light)
  • 1/4 c
    sour cream (i use light)
  • 1/2 tsp
    salt
  • 1 clove
    garlic, pressed
  • 1 pkg
    (9 oz) frozen chopped spinach, thawed, drained and patted dry
  • 1/3 c
    chopped carrot
  • 1/4 c
    chopped onion
  • 20 slice
    (1/4 inch) french bread, slices or other bread on hand

How To Make monterey spinach melts

    Preheat oven to 375°F. Cut cheese into 20 thin slices; cover, and set aside.

    In a large bowl, combine next 4 ingredients; mix, until well blended. Stir in, next 3 items.

    Spread rounded tablespoonful of spinach mixture, onto each bread slice. Place on baking sheet; top with cheese.

    Bake 10-12 minutes, or until cheese is melted and bread is crisp. Serve warm. Makes 20
