This is one of those cases where I started with a basic guacamole recipe and played with it until it was how I like it best. Personally I like my guacamole "lumpy" not smooth. So I only mash up about half of the avocado and leave the rest in small chunky pieces.

Ingredients For guacamole grande

  • 1/3 c
    red onion, finely chopped
  • 2 sm
    diced roma tomatoes
  • 2 sm
    jalapenos, minced
  • 1 lg
    clove garlic, minced
  • 1/4 tsp
    salt
  • dash
    tabasco or other hot pepper sauce
  • 2 Tbsp
    fresh cilantro, finely chopped
  • 2 Tbsp
    fresh lime juice
  • 2 or 3 lg
    ripe avocados

How To Make guacamole grande

    In a bowl that has a lid combine everything except the avocados and mix well.

    Coarsely mash the avocados and then stir them into the bowl with the rest of the ingredients. Mix well. Squeeze just about 2 teaspoons of lime juice over the top, lay some plastic wrap on the top of the guacamole and let it hang over the sides of the bowl. Then put the top on the bowl. This will help keep the guacamole from turning an unappetizing brown color.
