When the weather turned I harvested my tomatoes and made this recipe. I found it on www.delish.com. I added some seasonings.

Ingredients For green tomato salsa

  • 8 oz
    green tomatoes
  • 8 oz
    ripe red tomatoes
  • 1 c
    fresh corn kernels (or frozen)
  • 1/4 c
    chop fresh chives - or 1/8 cup of fresh cilantro
  • 2 Tbsp
    fresh lemon juice
  • 1/2 tsp
    salt (or to taste)
  • 1/8 tsp
    coarsely ground pepper (or to taste)
  • taco seasoning mix (or to taste)

How To Make green tomato salsa

  • 1
    Chop the red and green tomatoes. Chop the chives.

    In medium bowl, gently stir tomatoes with corn, chives, lemon juice, taco seasonings, salt and pepper. Cover and refrigerate at least 1 hour to blend flavors, or up to 8 hours. Drain before serving if chilled longer than 1 hour.
