Ingredients For bacon cherry bombs!

  • 1/2 pkg
    bacon
  • 4 lg
    avacados
  • 1 lg
    jicama
  • 3 c
    panko crumbs
  • 1/4 c
    sesame seeds
  • 1/8 tsp
    celery salt
  • 1/8 tsp
    paprika
  • 1/8 tsp
    crushed red pepper
  • dash
    dill
  • dash
    black pepper
  • 1 Tbsp
    sun dried tomato, finely chopped
  • 1 Tbsp
    chives, finely chopped
  • 1/2 c
    cherry balsamic, reduced

How To Make bacon cherry bombs!

    Fry until crispy half a pound of bacon then fine chop and set aside on a paper towel to drain.

    Peel and smoosh 4 large avocados until they can be mixed but are still lumpy.

    Peel and cut jicama into two inch sticks about the thickness of a sharpie and set aside.

    Gently mix the bacon into the avocado.

    Toss the rest of the ingredients to fully mix then pour onto a baking sheet and roast at 400 degrees until just toasted. Be careful not to let them burn.

    Form the avocado mixture into balls about 1 ½ inch in diameter.

    Roll the bombs in the Panko crumb mixture until completely coated.

    Insert a jicama stick into each one and drizzle the bottoms with cherry balsamic. Serve standing up on a tray or in shot glasses.
