This jelly makes a beautiful holiday gift if made with red and green bell peppers. Place in a gift basket with a block of cream cheese, a box of crackers and a nice serving dish. To serve, place block of cheese on dish and top with jelly. Spread on crackers.

Ingredients For pepper jelly

  • 3/4 c
    sugar
  • 1 c
    minced peppers (mixed bell pepper and hot pepper if desired)
  • 3/4 c
    apple cider vinegar
  • 1
    3 ounce package liquid pectin

How To Make pepper jelly

    Combine the sugar, minced peppers and vinegar in a deep 2 1/2 to 3 quart microwave safe bowl.

    Microwave on HIGH for 8 minutes.

    Stir in the pectin and microwave on HIGH for 2-2 1/2 minutes. Skim off foam.

    Pour into sterilized jelly jars or freezer containers. Cover with lids.

    Invert for 1 to 2 hours to disperse peppers.

    Refrigerate up to 3 weeks or freeze up to 1 year.
