Ingredients For guacamole

    avocados
  • 2
    limes, juiced
  • 1/2 tsp
    kosher salt
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
    ceyenne pepper
  • 1/2 md
    red onion or any onion
  • 3
    roma tomatoes seeded and diced small
  • 1 tsp
    fresh cilantro chopped
  • 1 lg
    clove garlic or 1/2 teaspoon granulated garlic

How To Make guacamole

    Scoop the avocado into a bowl, then add lime juice toss to coat and then drain reserve the juice. This is important because the lime juice will keep the avocado from turning brown

    Mash the avocado but leave it a little chunky, add the cumin, and cayenne . Now take the garlic and peel it, with the flat side of the knife crush the garlic with the salt. Continue crushing and dragging the garlic over the salt till you have a paste.Scrape the garlic off the board and add this to the avocado mixture and stir to combine.

    Now fold in the onions, tomatoes, cilantro and add 1 tablespoon of the reserved lime juice. Check for seasoning and also for lime juice. If you like it a little tangier add more lime juice. Let sit at room temperature for 1 hour and then check once more for seasoning and also heat. The cayenne will take a little while to take hold so I recommend holding off on adding more till the mixture has set for awhile.
