My family loves this recipe. I get compliments all the time when I bring this to events. I am not a big fan of cilantro so I use parsley but you can always substitute the cilantro for the parsley. Super fast and super easy to make...Enjoy!

Ingredients For black bean and corn texas caviar

  • 1/2
    green pepper, chopped
  • 1/2
    red onion, chopped
  • 3
    tomatoes, chopped
  • 1 can
    black beans, drained
  • 1 can
    corn, drained
  • 2 Tbsp
    olive oil, extra virgin
  • 2 Tbsp
    lime juice
  • 2 Tbsp
    lemon juice
  • 2 Tbsp
    parsley
  • 1/4 tsp
    black pepper
  • 1/4 tsp
    salt

How To Make black bean and corn texas caviar

    Chop the tomatoes, green pepper and onion, place in a medium sized bowl.

    Add corn, beans, olive oil, lemon and lime juice, parsley, salt and pepper. Stir all ingredients until they are mixed.

    Refrigerate for at least 1 hour before serving. Note: this gets better as it sits, so the next day it may taste even better!
