I made this recipe up for my grandchildren after buying them a new book..... "Green Eggs and Ham"... But we also eat these for St. Patrick's Day and Easter! It is a fun and easy recipe.... Remember to PLAY WITH YOUR FOOD! xo

Ingredients For green eggs and ham !

  • EGGS
  • 12 lg
    eggs (boiled and cooled)
  • GREEN EGGS
  • 12
    egg yolks
  • 1/3 c
    finely minced onion
  • 1/3 c
    finely minced celery
  • 1 Tbsp
    yellow mustard (or to taste)
  • 1/3 c
    ranch dressing
  • blue and green food coloring (to liking)
  • 2 dash
    salt and pepper
  • 1 Tbsp
    (heaping) sweet pickle relish (can use dill)
  • HAM
  • 1/2 c
    finely minced (or ground) ham
  • 1/3 c
    finely minced onion
  • 1/3 c
    finely minced celery
  • 1/3 c
    ranch dressing
  • 2 dash
    ground black pepper
  • 1 Tbsp
    pickle relish of choice

How To Make green eggs and ham !

    Put 12 eggs in a pan of cold water. Bring the water to a full boil, then set your timer for 5 minutes. When time is up. Let sit to cool a bit.
  • Boiled Eggs with the yolks removed.

    Peel the egg shells off of the eggs. Cut eggs in half, remove the yolks from the whites and put them in a bowl, set the whites on a plate.

    Using the tines of a fork, crumble the egg yolks.
  • Minced celery and minced onion.

    Mix in the onion and celery.

    Add the mustard and ranch dressing sparingly until it reaches the right consistancy. Add salt and pepper. Stirring together well.
  • I first added blue food coloring and then a bit of green to reach my desired color for my green eggs.

    Add the blue food coloring and if necessary add some green food coloring to reach your desired color, stirring well.
  • Heaping Tablespoon of pickle relish.  (This is my home made relish).

    Add pickle relish, stirring well. Set this aside until ready to fill the egg white halves.

    Finely mince or grind up the ham. Add all the remaining ham ingredients together stirring well to desired consistancey as you did with the egg yolks.

    Fill or over fill your egg whites with both of the fillings. You can spoon the filling or pipe it into the egg white halves.

    If you have a deviled egg platter, place the eggs in desired arrangement. *** We always read the book "Green Eggs and Ham" with the kids when we make this..... Enjoy!
