My dad passed away in September '11 and my Uncle made this for his memorial we had for him. Dad passed away at an Army Hospital in Texas but all his family and friends are here in Ohio. We all came together to celebrate his life and I fell in love with this recipe. **I havent made this myself yet but I think I am going to add some kind of cheese** Awesome side dish or a appetizer dip with chips. Hope you enjoy! It is quite spicy so change amount of spices to your tastes.

Ingredients For uncle alan's mexican rice

  • 2 lb
    ground beef
  • 2
    bell peppers, diced
  • 1 lg
    sweet onion, diced
  • 1 can
    (large can) diced tomatoes with juice
  • 1 can
    (large can) tomato juice
  • 1/4 c
    brown sugar, light
  • 2 c
    rice, long grain (not minute rice)
  • 2 Tbsp
    chili powder
  • 1 Tbsp
    garlic powder
  • salt and pepper to taste

How To Make uncle alan's mexican rice

    In larger pan, brown ground beef, onion, peppers, salt and pepper until no longer pink. Drain. Return to pan.

    Add remaining ingredients (except the rice) to cooked meat mixture, bring to a boil. Add rice.

    Return to a boil, stirring often. Reduce heat and simmer until juices are absorbed and rice is tender. (This is where I would add some cheese) Eat:)
